Oatmeal Pancakes

Serves: 4

Ingredients:
1 Tablespoon
Unsalted Butter
1 Cup
Milk (regular or non-dairy)
1 Cup
Rolled Oats
2
Eggs
1 Tablespoon
Granulated Sugar
2/3 Cup
All-purpose Flour
2 Teaspoons
Baking Powder
1/4 Teaspoons
Kosher Salt
1/4 Teaspoons
Ground Cinnamon
Instructions:
In a bowl, Microwave the
1 Tablespoon Unsalted Butter
for 30-60 seconds (until it has completely melted).
Mix in the
1 Cup Milk (regular or non-dairy)
+
1 Cup Rolled Oats
into the bowl and let it sit for at least 5 minutes.
Heat a pan at medium heat.
Mix in everything else into the bowl.
Scoop a pancake-amount of batter onto your skillet/frying-pan/whatever-have-you.
